I haven’t had an alcoholic beverage in ages, but one I of my favorite things is to enjoy a nice cocktail after a long day. These days I make mocktails but they’re just as satisfying! For anyone else searching for a yummy mocktail recipe or something kid friendly, I thought I’d share a recipe I am loving at the moment! Perfect for warm weather and patio drinks with friends. Watermelon-Lime Soda
Ingredients
- 3/4 cup sugar
- 1/2 cup water
- 1/4 cup chopped peeled fresh ginger
- 10 cup diced watermelon
- 3/4 cup fresh lime juice
- 4 cups chilled club soda
- Ice
- Garnish: mint sprigs
Directions
Combine sugar, water, and ginger in a small saucepan over high heat. Cook until sugar dissolves, stirring with a whisk. Remove from heat; cover and let stand 15 minutes. Strain; discard solids. Working in batches, place diced watermelon and fresh lime juice in a blender; process until smooth. Strain watermelon mixture through a fine sieve into a pitcher; discard solids. Stir in sugar syrup and chilled club soda. Serve over ice; garnish, if desired.
